Curry is…everywhere. The word itself encompasses a variety of styles and flavors served in a variety of countries under a variety of names. But whether you’re talking about korma (made with yogurt or cream), vindaloo (made with vinegar and chili), tikka masala (made with creamy tomato sauce), it’s all curry. Regardless of which one you choose, they’re all mouthwatering and delicious. This recipe for Chickpea Curry allows you to control the heat, and calls upon the creamy, tomato goodness of your favorite tikka masala. It’s a delicious eating adventure!

Ingredients
2 tablespoons vegetable oil
1 onion, finely chopped
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground paprika
1/2 teaspoon cayenne pepper (optional)
1 can (14.5 oz) diced tomatoes
1 can (15 oz) chickpeas, drained and rinsed
1 can (14 oz) coconut milk
Salt to taste
Fresh cilantro for garnish
Cooked rice or naan bread for serving
Instructions
Chop the onion, mince the garlic, and grate the ginger. Measure out all the spices.
In a large pan, heat the vegetable oil over medium heat.
Add the chopped onion and cook until it becomes translucent (about 5 minutes). Then add the minced garlic and grated ginger, cooking for another 2 minutes.
Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.
Add in the diced tomatoes, including their juices. Cook for about 5 minutes, allowing the mixture to thicken slightly.
Add the chickpeas and coconut milk to the pan. Stir to combine, then bring the mixture to a simmer.
Let the curry simmer gently for about 20 minutes, allowing the flavors to meld together. Stir occasionally.
Season with salt to taste. Garnish your Chickpea Curry with fresh cilantro and serve hot with cooked rice or naan bread. Enjoy!
